Is that I have time to make these! Quick ‘n Easy Whole Wheat Banana Pancakes. I found this recipe on Green Lite Bites about a year ago and they have become a regular part of my Saturday morning routine.

 

You will need:

  • 1 large overripe banana
  • 1 egg
  • ½ cup milk (I use vanilla soy)
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp ground nutmeg
  • ¾ cup whole wheat flour
  •  

    First, mash the banana:

    Then, whisk with milk and egg until frothy:

    Mix together dry ingredients (flour, baking powder, baking soda, and nutmeg):

    Combine wet and dry ingredients just until incorporated:

    Pour batter in a non-stick skillet or griddle over medium heat sprayed with non-stick cooking spray. Cook about 1-2 minutes a side, small bubbles will form but not as many as traditional pancakes. Peak underneath for a light brown color, then flip!

    Top with whatever you like- my fave it peanut butter, fresh banana, a little cinnamon, and a little syrup:

    Recipe makes 6 medium-sized or 9 small pancakes (3 medium shown above).
